21 Cake

“21 Cake”

Pumpkin Butterscotch Cake with Nutella Salted Caramel Filling and White Chocolate Cinnamon Icing



A few weeks ago, Lauren turned 21. Needless to say, this upped the ante. Obviously, I was going to make her a birthday cake, but I have a baking blog with her, so it couldn’t just be any normal birthday cake. It needed to be epic. Creative, multi-faceted, and full of things that Lauren loves. While brainstorming this cake, I realized it was going to require a lot of ingredients. So, I made absolutely sure that it had 21 unique ingredients, one for every year Lauren has graced the Earth. 

We had the cake at Lauren’s birthday party, and it was definitely a hit. I may never make a cake this awesome again, but you should totally try. Here’s how: 

Pumpkin Butterscotch Cake 




2 1/4 cups flour
1 tablespoon pumpkin pie spice
1 teaspoon cinnamon
1 teaspoon baking soda
1 tsp salt 
1 tbsp baking powder 
½ box butterscotch pudding mix 
1/2 cup granulated sugar
1/2 cup dark brown sugar  
¾ cup (1.5 sticks) unsalted butter, room temperature. 
2 eggs
½ cup milk
1 teaspoons vanilla extract
1 (15 ounce) can pure pumpkin puree
1 cup dark chocolate or semisweet chocolate chips 
½ cup butterscotch chips 

Preheat oven to 350. Mix all dry ingredients and then gradually mix wet ingredients in.


Once well-mixed, add in chocolate and butterscotch chips. 



Separate batter into 3 parts and cook each part separately in a greased 9 inch round pan. Bake each part for 15-17 minutes, or until a toothpick inserted into the center comes out clean. Let layers cool completely, and then flip each layer upside down before topping with filling and icing. 






Nutella Salted Caramel Filling




2 packs Rolos 
½ jar Nutella 
1 tsp salt 
1/3 cup powdered sugar 
½ stick butter 
2 tbsp flour 


Melt all ingredients together in a small saucepan on low-medium heat. Add between cooled cake layers. 

   

    


White Chocolate Cinnamon Icing 


 

1 Box white choc pudding mix 
1 3/4 cups powdered sugar 
4 tbsp butter, softened 
2 tbsp greek yogurt 
1 tsp vanilla 
1 tsp cinnamon 
½ tsp salt 


Mix all ingredients together and after putting the filling between the cake layers, ice the outside with this icing, using a knife or spatula.

   


Go all out for your friends’ birthdays, and when in doubt, bake!
