Cookies and Cream Cookies

Cookies and Cream Cookies

One of my favorite ways to invent recipes is to browse all the food I have and get inspired by a specific fun item. A few days ago when I was doing this, I found two sources of inspiration: a Hershey’s Cookies ‘n’ Crème bar and Cookies and Cream Chex Mix. I was in a cookie mood, so I decided to melt the Hershey’s cookies ‘n’ crème bar, add white and semisweet chocolate chips, and then coat the dough and finished cookies in a mixture of the Cookies and Cream Chex Mix, Powdered Sugar, and Hot Chocolate Mix. This all may sound a bit overwhelming, but I assure you the final product is just the right amount of whelming!

For cookies:
· 1 egg
· 1 teaspoon vanilla extract
· 2 tbsp milk
· 6 tbsp softened butter
· 1/2 tsp vinegar or lemon juice
· 1 1.55 oz Hershey’s Cookies n Crème bar, melted (1 minute in the microwave on low heat should do it)
· 1 1/3 cups flour
· 1/2 teaspoon baking soda
· 1/4 teaspoon baking powder
· 3/4 cups white sugar
· 1/2 cup white chocolate chips
· 1/2 cup semisweet chocolate chips

For coating
· 1 cup Cookies and Cream Chex Mix, crushed (to roll cookies in, measure before crushing)
· ¼ cup powdered sugar
· 1 packet hot chocolate mix

Preheat oven to 375 degrees
- Mix wet ingredients
- melt the Hershey’s Cookies ‘n’ Crème bar and mix that in

- Gradually add in the dry ingredients
- Once dough is combined, chill in freezer for 30 minutes

- Roll into 1-inch balls and roll balls into coating (will have some leftover)

- Cook for 8-10 minutes, then let cool
- While the cookies are in the oven,
- Once cooled, dip cookies into the coating again!
- Enjoy!

If I've learned anything from making these cookies and similar baking experiments, it is that adding tasty sweets to other tasty sweets always leads to tastier sweets.

So, combine goodness to make more net goodness in the world…and when in doubt, bake!
