Dark Chocolate Nut Butter Crisps with Pistachio Chocolate Chip Dip



What could make a better party snack than chips and dip? Well, in my opinion, a lot of things. But for those of us with a sweet tooth, cookie crisps and sweet dip are quite the improvement on the traditional chips and dip! To be honest though, this concept was a bit of an accident. I wanted to make a sort of sandwich cookie, with the pistachio dip as the filling. However, it just wasn’t really the right consistency to work well as a filling. So, I ended up with these incredible, crispy thin cookies and a refreshing pistachio dip. Bring this to the next party you attend, set it next to the chips and dip, and see what gets finished first!

Dark Chocolate Nut Butter Crisps 

Ingredients: 

 
1/3 cup Nutella
1/3 cup (Whole Foods fresh) chocolate almond butter
1/3 cup peanut butter
1/2 cup packed brown sugar
1 egg
½ cup flour
½ tsp baking soda
½ tsp baking powder
½ tsp salt
1 tbsp Hershey’s Dark cocoa

Directions: 
Preheat the oven to 350. 

Mix cookie ingredients in the order listed. 


In greased mini muffin tins, press one tsp of dough down into the bottom of each tin.


 Bake for 10-12 minutes.



Pistachio Chocolate Chip Dip 

Ingredients:  


1 box pistachio pudding mix
¾ cup milk
¼ cup greek yogurt
½ cup mini semisweet chocolate chips 

Directions: 
Mix pudding and milk using a whisk and let set for 10 minutes before mixing in the greek yogurt and chocolate chips. 


Serve cold.

Remember, you can often recover from challenges and mistakes, and when in doubt, bake!
