Mint Smore Cones
Nothing says summer like smores by a bonfire. Except maybe
ice cream! I didn’t have a bonfire or ice cream on hand, but still managed to
combine these two popular summer treats into one adorable and delicious delight!
If you’ve never baked in ice cream cones, or even if you have, this is one easy
and fun recipe you have to try!
What you’ll need:
Mini muffin tins
about 12 ice cream cones
Graham cracker cookie ingredients:
(Used recipe from http://theeccentriccook.blogspot.hu/2012/06/smores-deep-dish-cookie.html)
¾ cups crushed graham crackers (about 7 graham cracker sheets)
1 cup flour
½ tsp baking soda
½ tsp salt
½ cup packed brown sugar
1 stick of butter, softened
1 tsp vanilla
1 egg
Other ingredients:
12 mini York peppermint patties
24 Jet-Puffed mint chocolate
marshmallows, cut into halves
Directions:
1. Place cones into mini muffin tins
2. Mix cookie dough ingredients
3. Separate cookie dough into the cones and cook on 350 for 11 minutes
4. Remove from oven
5. Place one York peppermint on top of each cone
6. Place 4 marshmallows halves on top of each cone
7. Cook for 5 more minutes on 350
8. Let cool for a few minutes, but not too long because these are best when they’re warm and the marshmallow topping is gooey!
Have a great rest of your summer and when in doubt, bake!
