Double Crisp Mozzarella Crackers


If you're anything like me, the word "crackers" probably doesn't exactly conjure up the most tempting and delectable mental image. Chances are, it makes you think of saltines or oyster crackers, or contests at summer camp to see who could eat the most crackers at once. Unfortunately, crackers are often plain, relatively flavorless vehicles for more exciting flavors such as cheese or soup. But why is this? Crackers, in theory, should be wonderful. They are crispy, crunchy, salty, and snack-sized. Shouldn't they be more than just an afterthought served in a plastic wrapper?
Well, the good news is that they CAN be more, and this recipe proves it! By adding the cheese and seasoning inside of the crackers, this recipe eliminates the need for any dips or spreads, instead making a crunchy and delicious cracker that stands alone. The recipe also uses crushed cornflakes to add an extra crunch to the cracker that makes it even more special. So, put away your cardboard boxes and plastic wrappers, and get ready to revolutionize your idea of crackers forever.

Double Crisp Mozzarella Crackers

Ingredients:
3/4 cup crushed cornflakes
3/4 cup all-purpose flour
1/4 tsp. salt
1/4 tsp. baking soda
1 tsp. Italian herb blend
1/8 tsp. paprika
1/4 tsp. black pepper
1/2 tsp. garlic powder
Several dashes of red pepper flakes
1 oz grated mozzarella cheese
2 tbsp. butter, melted
1 egg

1. Preheat oven to 350 degrees F. Crush cornflakes finely in ziploc bag and measure 3/4 cup into mixing bowl.


2. Add flour, baking soda, seasonings, and grated cheese to bowl. Mix well.


3. Whisk melted butter and egg together in separate bowl. Add to dry ingredients and mix until well-incorporated.


4. Spread mixture thinly and evenly onto foil-lined baking sheet or in pie pan. Bake for 7 minutes, remove, and slice into separate crackers.



5. Separate crackers and place onto larger baking sheet. Lightly flatten crackers with rolling pin or fork as much as possible without breaking the cracker. Bake for another 5-8 minutes until golden and crispy.


6. Remove and let cool on sheet for about 30 minutes. Remove from sheet and enjoy!




Cheesy, crunchy, delicious--what more could you want in a snack? The double baking adds a rustic, homemade feel to the texture, but these crackers still melt in your mouth. I promise that after you try these, you will never want store-bought crackers ever again. And you just might end up eating the whole batch in two days...
